This is a recipe that my mom had written down, from who knows where, a while back and I decided to try it out! Judging from the batter I didn’t see how they were going to end up (especially without any eggs!), but they turned out great. They definitely do not have the typical chewy cookie texture, but have a texture more similar to a muffin top. So keep that in mind when making these!
With no added sugar, butter or oil- they are super healthy and would be great for breakfast or for a low calorie snack! You will see that I have peanut butter listed as an optional ingredient. The first batch I made with the peanut butter and the second without. Personally I preferred it WITH the peanut butter, but either is fine!
Skinny Banana Oat Cookies
- 3 ripe bananas
- 1/3 C. applesauce
- 2 C. oats
- 1/4 C. almond milk
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1/4 C. peanut butter (optional)
- Preheat oven to 350.
- Combine all ingredients in a large mixing bowl and stir until completely combined.
- Bake for 15-20 minutes.
Do you prefer “skinny” desserts or regular? I obviously prefer my normal butter-filled cookies and brownies but love coming up with skinny options that taste great as well! It’s all about moderation (;
