Scared Babies + Healthy Chocolate Chip Peanut Butter Oat Bars

Hey guys! How was your 4th of July?!
Stu has the day off and our best friend Luke is coming in town later so this is going to be short and sweet! I have tons of cleaning and cooking to do! Our 4th of July was pretty low-key, and we spent it relaxing and eating good food with family. The evening didn’t go so great- TWO of our neighbors shot fireworks and woke Levi up at 9:30ish (they shot them until midnight) and I actually thought Axell was going to heart attack. So our night was spent trying to get Levi back to sleep and loving on Axell trying to get her to calm down. The real fun is going to be tomorrow which is when we are having a little post 4th of July party at our house- and I am super excited! BUT like I said I have tons of prepping to do- so no five things Friday today, just leaving you with an awesome recipe!

Have you ever tried a Larabar? Well if you have tried the chocolate chip cookie flavored Larabar, than these bars are very similar in taste. BUT BETTER. Promise.

Larabars base is typically made of dates and some type of nut (cashews in the particular flavor I am talking about). My bars do use dates, but I used ground oats instead of cashews. Their is just the right amount of peanut butter in the bars so that it’s not over powering, but you definitely taste it. I will definitely be making these bars again because they were excellent AND my husband who hates most things healthy loved them!

Healthy Chocolate Chip Peanut Butter Oat Bars

- 1 C. dry oats
- 25 pitted dates
- 2 Tbs. peanut butter
- 1/4 C. greek yogurt
- 1 Tbs. honey
- 3/4 C. chocolate chips

- Pulse oats in a food processor until finely ground.
- Add the dates and pulse until oats and dates are completely ground and mixed.
- Add peanut butter, honey and greek yogurt. Pulse until a thick dough forms into a ball in the processor.
- Add the chocolate chips and pulse until they are evenly incorporated throughout.
- Remove from processor and press dough out onto foil-lined baking dish.
- Let chill in fridge for about 1 hour. Cut into bars.
