Hi guys! I took yesterday off from blogging and just spent most of the day away from the computer. To be honest I barely even read any blogs and just hung around the house with the little man. I don’t know about you but sometimes I just need a day like that. I am definitely more than ready for the weekend and super excited about Levi’s first swim lesson tomorrow!! Other than that I am not really sure what is going down, but hopefully something fun!
Here we go with five things Friday…
1. My Wednesday night was spent drinking wine and chatting with my good friend Lauren. We had planned on watching Breaking Dawn 1 & 2, but neither of us could keep our mouths shut long enough to put the movie in- oops! And then she proceeded to show me her limited edition DVD that has one of the petals from the wedding scene. And then I died.
2. I made Averie’s Cookie Butter Brown Sugar Streusel Bars earlier in the week. Oh my goodness they were good. It was one of those impulse baking moments and I ended up throwing most of them out because I seriously wanted to eat all of them.
3. I took Levi to the gym’s child watch…But I couldn’t leave him. I just could not do it. I let him play for about 30 minutes and then we left. I might try again next week, but we’ll just have to see!
4. Dawson’s Creek. It’s all I’ve been watching. I started at the first season a week or so ago, and am now half way through season 3. I have even got Stu kind of hooked on it! I watched all of the seasons when they first aired, but I can’t remember anything about it. I’m glad I don’t though because it’s like watching it for the first time all over again!
Thoughts so far:
I LOVE Pacey. He is definitely my favorite character on the show and I want him to be with Joey (I think). I also like Dawson and sometimes Jen. I was sad when Jack came out as gay (because he’s a hottie) and I CAN’T STAND Andi. Eww.
5. Lasagna Soup. I made this for dinner last night, and oh my it was good! I very-loosely followed Bobby Deen’s lightened up version of Paula’s original Lasagna Soup Recipe. It ended up being a super easy and pretty healthy dinner that I will definitely be making again!
Lightened-Up Lasagna Soup
- 2 tsp. olive oil
- 1 lb lean turkey sausage, cooked
- 4 cloves garlic, minced
- 1 (32 oz.) container chicken broth
- 1 (29 oz.) can tomato sauce
- 1/2 tsp. salt
- 1/2 tsp. crushed red pepper
- 2 1/2 C. egg noodles
- 1/2 cup fresh basil, chopped
- 3 tablespoons grated parmesan cheese
- 1/2 cup reduced-fat shredded mozzarella cheese
- In a large pot over med/high heat, add oil and cook garlic until soft. Add sausage.
- Add chicken broth, tomato sauce, salt and crushed red pepper. Bring to a boil.
- Reduce heat and let simmer for about 20 minutes. Bring back to a boil and add noodles.
- Cook noodles for 10-12 minutes and then remove from heat.
- Stir in fresh basil, mozzarella and parmesan cheese.
